Campofei is a raw-milk cheese with a soft, pale straw-yellow colour and few, well-distributed holes. The rind is thin, slightly mouldy and grey in colour. The 90-day maturing period brings out the aromas of the pasture and gives the right buttery texture to the taste: the flavour is sweet and milky with an oily texture

Born in response to the needs of those who remained isolated in the high mountains, but rapidly becoming noble at the end of 1200, Castelmagno is a unique cheese, with a crumbly texture and a beautiful pearly white colour. It has a scent and persistent taste reminiscent of the flowers and herbs of high-altitude pastures. Des Martin continues this tradition in his extremely rare version of “alpeggio" PDO.
