The Cocina de Senén is a Basque establishment investigating and applying new culinary concepts leading to the invention of dehydrated vegetable laminae, a 100% natural, tasty and healthy product which has become the main ingredient for the preparation of an innovative Mediterranean sushi and was later used in an endless number of crispy snacks and various pasta recipes. All of these creations were developed in the Sagartoki restaurant and have received the most prominent gastronomical awards. The “Egg Pintxos” was elected as Spain’s best tapas for two consecutive years.
